"Whatever good thing you say about this sponge cake will always be true - it is delicious, aromatic and irresistible"

Ingredients

  • flour - 7 oz (200 g)
  • sugar - 5.3 oz (150 g) + 1 tbsp. for sprinkling
  • apples - 1 - 2 pcs. (sour variety)
  • lemon juice - 3 tbsp.
  • brandy - 1 1/3 tbsp (20 ml)
  • soft butter - 3.5 oz (100 g)
  • yogurt - 1.4 oz (40 g) thick, full fat
  • eggs - 3 pcs.
  • baking powder - 1 tbsp (15 g)
  • salt - 1 pinch
  • powdered sugar - for sprinkling

How to make

Preheat the oven to 360°F (180 degrees). Peel the apples and cut them into halves or quarters. Cut each piece into thin slices without reaching the end and drizzle them with lemon juice, so that they don't darken.

Beat the soft butter with the sugar, until a smooth mixture is obatined. Add the eggs one at a time, while beating at all times.

Towards the end, add the brandy, yogurt and salt, by stirring until a smooth mixture is obtained.

Sift the flour with the baking powder in portions to the mixture and with a spatula make rotating movements, until it is fully integrated.

Grease and flour a suitable sponge cake mold (or tray with a diameter of 10.6″ /27 cm/). Pour the mixture, by leveling it out and arrange the apples on top with the cut part up.

Sprinkle it with sugar and put it in the preheated oven for about 35 minutes or until it is fully baked.

Leave it to cool for 10 minutes before removing it from the mold and sprinkle it with powdered sugar before serving.
