How to make
Peel the potatoes, place in a pot with water and boil, until cooked.
Clean the spinach and spring onion, and chop finely. Arrange the vegetables into a tray. Preheat the oven to 390°F (200°C).
Pour the oil over the chopped spinach and onions and bake, until they soften.
Add the mashed potatoes and season with salt, pepper and vegetable seasoning.
Sprinkle with the crumbled feta cheese.
Whisk the eggs, add the cream and stir to a homogeneous mix.
Pour the mix over the potatoes and place the gratin back into the oven.
Bake for about 30 minutes.
