How to make
Clean and wash the chicken. Cut it in half, but leave it whole.
In a bowl, add the softened butter, black pepper, paprika, salt, universal spice and crushed dried thyme. Stir. Spread the chicken well with the resulting mixture.
Peel the potatoes and wash them. Cut them into large slices, like wedges. Place them in a baking pan.
Cut the onions and carrots into small cubes and add them to the potatoes. Season them with salt, drizzle them with oil and mix well.
Put the chicken in the middle of the baking pan, where the potatoes are. Pour enough water to cover them.
Wrap the baking pan in aluminum foil and place it in a preheated oven at 430°F (220 degrees) for about an hour and a half. Cook until everything is cooked through and remove the foil for the last 10 minutes.
Tear the chicken into portions and serve the chicken with potatoes.
