How to make
Beat the eggs with the salt and sugar. They do not need to be foamy.
Pour the olive oil, milk and beer in that order and mix very well, until a homogeneous mixture is obtained.
Pour the flour into portions, by beating with a wire whisk, so that no lumps form. Add as much flour as needed, until you get a thick mixture.
Bake the pancakes in a lightly greased pan with olive oil with a non-stick bottom.
Once you take out each pancake, spread it with plenty of olive oil, so that it soften well and become even more fragrant.
Serve them with a topping of your choice. Sweet or savory are both suitable - the choice is yours.
