How to make
Cut the plums in half and pit them. Cut them into not very thin crescents and sprinkle them with a spoonful of sugar. Leave them like this for 10 minutes and during that time you can prepare the cake mixture.
Beat the eggs and sugar into a fluffy white foam. Add the yoghurt and the flour, by sifting it and beating the mixture at all times.
Heat a non-stick pan over high heat and roast the plum pieces on each side for a few seconds. Do not put them in a pile all at once, but little by little and as soon as they caramelize and aquire an appetizing color, remove them from the heat immediately.
Arrange them in a greased or covered with baking paper baking pan, for example for a cake with a diameter of 10″ (26 cm), to make a very fine cake. For a thicker cake, you can use a smaller pan, but the idea is to make it as thin as a pancake, that's part of its charm.
Arrange the pieces of plums in the cake tin and pour the prepared mixture. Bake, until it aquires a golden brown color in a preheated oven at 390°F (200°C).
Leave the baked fine cake with yellow plums to cool briefly, but not completely and sprinkle it with powdered sugar.
Serve it slightly warm on its own or with a scoop of ice cream or whipped cream. It's so delicious, that I'll admit that I destroy half of it myself in minutes.
