"An unique spinach sponge cake, which the whole family will adore"

Ingredients

  • flour - 6.7 oz (190 g)
  • baking powder - 0.35 oz (10 g)
  • spinach - 1.7 oz (50 g)
  • milk - 2 2/3 tbsp (40 ml)
  • oil - 2 2/3 tbsp (40 ml)
  • sugar - 3.5 oz (100 g)
  • vanilla - 1 powder
  • eggs - 2 pcs. (XL)
  • lime - 1/2 pc. (the juice and peel)
  • pistachios - 3 tbsp. (chopped)
  • powdered sugar - for sprinkling

How to make

Beat the eggs with the sugar, until a fluffy mixture is obtained. Pour the milk and oil, as well as the spinach leaves, which have been cleaned from the stems and have been scalded in advance.

Blend until a perfectly smooth mixture is obtained.

Add the vanilla, lime juice and peel (very finely grated), to the mixture.

Sift the flour in portions along with the baking powder and mix gently with a wooden spoon, until it is completely absorbed. If it is too thin, add some more flour.

Pour the cake mixture into a small mold, which has been greased and sprinkled with flour in advance, unless it is silicone.

Bake the spinach sponge cake in a preheated oven at 360°F (180 degrees) for 30 minutes or until it is fully baked.

Cool it on a wire rack and serve the spinach sponge cake sprinkled with powdered sugar.
