This ordinary sponge cake with honey does not contain leavening agents, so it takes more time to thoroughly beat the eggs with a mixer or food processor.
Beat the 7 eggs in a bowl, add the sugar and beat for 10 minutes, until they become white and fluffy.
Add the honey and milk and continue beating for another 2 minutes.
At the end, pour the flour, by sifting it in portions to the fluffy mixture and mixing it with smooth movements, until it is completely integrated.
Transfer the sponge cake mixture into a cake tin, which has been greased with butter in advance.
Bake it in a preheated oven at 360°F (180°C) for 20 minutes, then cover it with aluminum foil and continue baking for another 20-25 minutes.
Do not immediately remove the easy sponge cake from the oven, but leave it inside with oven door slightly open for 15 minutes, then turn it over onto a wire rack and wait 1 hour for it to cool.
It may flatten slightly, but this is not a problem.
Cut the sponge cake with honey into pieces and serve it with a cup of coffee or milk.
