How to make
Wash the beef tongue well and boil it in a pressure cooker in slightly salted water with a few grains of allspice and bay leaf. If you boil it in an ordinary pot with a lid, it will take longer.
Immediately after cooking, while the tongue is still warm, peel it. Cut it into slices and sprinkle it with salt and black pepper.
Fry the onion in the oil, add the peppers and the flour and paprika at the end. When the paprika is lightly fried, add the grated tomatoes. Pour the wine, bay leaf and 3 grains of allspice. Boil, until the water in the sauce evaporates and it remains in fat.
When the sauce thickens enough, add the chopped garlic cloves, salt, as much pepper as you like and pour it over the slices of boiled tongue.
Serve the dish generously sprinkled with finely chopped parsley.
The boiled tongue with aromatic tomato sauce is ready.
