Vegetable spreads are a whole world of different combinations and flavors, which we can spread on a slice of bread or cracker and eat as an appetizer with a good drink.
One of the favorites is the one with mushrooms.
Besides being very tasty, it is quick to prepare, healthy and does not require heat treatment.
Crush the garlic in a mortar and add the lemon juice and spices you have chosen. I put a little thyme and dried coriander leaves, but you may prefer another combination.
In a blender, grind the mushrooms (previously peeled), so that you don't have to wash them and irrigate them unnecessarily with water, which would dilute the spread.
The resulting mushroom paste does not have to be super fine. Mix it with cream cheese or thick mayonnaise, add garlic with lemon juice and spices and as much salt as you like.
You can flavor the mushroom spread with more lemon juice, but in order not to liquefy the consistency, balance it if you like with lemon peel (finely grated only the yellow part of the citrus).
Serve the delicious vegetable spread with toasted slices of bread, crackers or chips and snacks of your choice.
