How to make
Mix the coconut milk, white rum, lime juice and sugar in a shaker or blender. Beat everything well for at least 2 minutes by hand or half a minute if using a blender. The goal is for the sugar to melt.
Add the ice and stir.
At the bottom of 6 cups distribute the sparkling water evenly and pour the white alcohol mixture on top.
In each cup, chop fresh mint leaves and if they are small, add them whole. Finally, sprinkle the Mojito with pomegranate seeds and serve it.
