How to make
Boil the pasta according to the package directions. Preheat oil in a pot and sauté the chopped green onions. Optionally, you can add some green garlic. Once softened, add the grated carrots. When they soften as well, add soya mince and crush it with a wooden spatula.
Salt, add black pepper, curry and chilli to taste and let it stew until tender, stirring occasionally. Then add the sour cream, chopped tomatoes and simmer until the sauce is slightly evaporated.
Season with dried basil and remove from the heat. Serve a plate of spaghetti, topped with the sauce with soya mince.
