How to make
Pick a young chicken, if older, you need to boil it until almost semi-cooked. Clean the chicken, rub it well with salt and pepper inside and out. Heat the butter in a tray and fry the finely chopped onion and then the garlic. Once softened, add the olives and chopped chicken offal.
Add the rice, top up with some hot water and stir until the rice absorbs the liquid and swells. Remove the stuffing from the heat and season it with salt, pepper and parsley. Fill the chicken well, sew it closed, and put it in an appropriate tray.
Pour in the oil and 1/2 cup water and put it to roast, pouring the sauce from the tray over it from time to time. Serve the stuffed domestic chicken with salad.
