How to make
Peel an onion and finely chop it. Put it in a suitable cookware along with the oil and stew it until it softens.
Add the peeled and sliced carrots. Cook until the carrots have softened. In a deep baking dish with a glass lid, pour the vegetable mixture.
Add the duck, pre-seasoned with salt and chicken seasoning.
Spread the duck with the tomato paste and add the rest to the vegetables.
Pour 1 cup of lukewarm water, cover it with a lid and bake it in a moderately heated oven at about 340°F (170 degrees).
When the duck starts to aquire a golden color, add the peas.
Season the roasted duck with salt, cover it with a lid and continue roasting until the water evaporates, the peas soften and the duck aquires a brownish-golden color.
The stewed duck with peas is ready.
