Beat the sugar and 2 egg yolks in a water bath. When they become fluffy and white, add chilled, aromatic and strong coffee and the sour cream.
Continue to boil in a water bath, stirring constantly, until you get a thick cream. Serve the cream cold and sprinkled with cocoa.
