Ingredients

  • broccoli - 10.5 oz (300 g) only the stumps
  • lime - the juice from 1 lime
  • olive oil - 4 tbsp (60 ml) + for sprinkling
  • cumin grains - 1 tsp.
  • tahini - 1 tsp.
  • garlic - 2 cloves
  • paprika - for sprinkling
  • salt - by taste

How to make

I guess most people, when cooking broccoli, throw away the stump or the so-called stem and base, on which the the top part of the broccoli are attached. With this recipe I will show you how to use them and make incredibly delicious hummus from them. You will be really surprised how good it is and you will never throw away this part of the healthy vegetable again.

Cut the stems and save the top part of broccoli for another dish or to prepare a healthy snack for your hummus. You just have to break them down, roll them in olive oil and add your favorite spices and bake them in the oven onto baking paper, until they aquire an appetizing color.

But let's focus on the hummus.

If the stems are too thick, cut them into smaller pieces and boil them for 15 minutes.

Strain them from the water and leave them to cool.

Put the boiled broccoli stems in a blender along with the garlic, olive oil, lime juice, tahini, salt and cumin seeds. Blend everything for a minute or until you get a smooth consistency.

If desired, you can add a handful of boiled chickpeas, but even without it, it turns out great.

Taste it and season it with more salt, if necessary.

Serve the hummus in a small bowl sprinkled with paprika and olive oil.

You will really fall in love with this delicious broccoli hummus, which on top of everything, is quick and easy to prepare.
