How to make
The pork ribs are washed and dried well. Cut them in the middle and each portion should have 3-4 ribs. The purpose is to fit in a narrower cookware.
The specified amount of duck or lard fat (with duck the result is much better) is melted on the stove without boiling and it is poured over the ribs so that they are completely covered with fat.
Place the baking pan in an oven preheated to 90 degrees and at this low temperature leave them to cook for 4-5 hours. The result is delicious and irresistibly tender meat.
The ribs are removed from the fat and it is strained and stored for other purposes - for potatoes or other food cooked by the confit method.
To finish your confit pork ribs, sprinkle them with salt and spices and bake them for 10 minutes in a preheated oven at 190 degrees.
Serve them with potatoes, other vegetables or a fresh salad.
