Ingredients

  • beans - 2 cups
  • carrots - 1 large
  • onions - 1 large onion
  • garlic - 4 cloves
  • oil - 1/2 cup
  • paprika - 2 tsp.
  • mint - 1 tsp.
  • salt - 1 tsp.
  • tomatoes - 2 pcs. (softer)

How to make

Soak the beans in cold water for several hours (or the night before). Pour out the water where they have soaked, cover them with new water and put them on the stove to boil.

Once they boil, discard this water and add new water, so that it covers the beans and goes slightly over them and put place it back on the stove. Do not add salt!

Peel and finely chop the onions and carrots and add half of them to the boiling beans.

Add the whole garlic cloves, mint and half of the oil. Leave the beans to boil on medium heat until they're fully cooked. It took mine 1 hour and 30 minutes, but it depends on the variety of the beans.

Once the beans are almost ready, add the washed, peeled and finely chopped tomatoes (you can also use canned tomatoes - about 1 cup). Add salt.

One the beans are fully cooked, make the stuffing for them. Pour the remaining oil into the pan and once it heats up, add the other half of the chopped onion and carrot.

Fry them for about 5 minutes and add 2 tsp. of paprika and fry it for 30 seconds. Add the resulting stuffing to the beans and leave it to boil for 1-2 minutes. Remove it from the heat and close the bean stew with a lid.
