"Appetizing vegetarian zucchini patties with white cheese and rice - you can eat them with yogurt or on their own"

Ingredients

  • yolks - 1 pc.
  • rice - 1 cup
  • zucchini - 1 small zucchini
  • white cheese - 3.5 oz (100 g) (crumbled)
  • onion - 1/2 onion (grated)
  • egg whites - 1 pc.
  • breadcrumbs - for rolling
  • black pepper
  • oil - for frying
  • oregano
  • salt

How to make

Wash the rice well and boil it until it's fully cooked in 2 cups of salted water. Strain it very well.

Grate the zucchini and sprinkle it with salt. Leave the zucchini for 15 minutes, then strain the liquid.

In a suitable bowl, pour the rice and add the zucchini, crumble the white cheese inside and add the egg yolk, oregano and half of a pre-grated onion. You can add spices of your choice.

A thick mixture is obtained. Pour breadcrumbs into a shallow dish and beat the egg whites into a bowl.

From the mixture, form rice patties, which are then dipped in the egg white first and then in the breadcrumbs.

Fry them in heated oil until they aquire a golden color. Take them out and place them onto kitchen paper, so that it can absorb the excess fat.

The vegetarian patties with rice, zucchini and white cheese are very tasty.
