How to make
The cauliflower is washed well under running water and chopped into small pieces. Place them in a blender and blend them with the mozzarella (it is important that it is processed).
The resulting mixture is mixed with a beaten egg and egg white, parmesan, salt and black pepper.
There are two ways to make pancakes: The first is healthier - baked in the oven. For it, cover the oven tray with baking paper and distribute the mixture. Form 4-5 round and thin pancakes. Bake them for about 20-25 minutes in a preheated oven at 360°F (180 degrees).
If you decide to make them in a pan, you need to add a little more flour, so that the mixture thickens and does not fall apart when turned. Use a pan with a non-stick bottom and grease its surface. Bake the pancakes until they aquire a golden color on both sides.
I will admit that I like the first option more, because it is easier and there is no danger of deforming the pancakes.
They go well with thin slices of tomato and cream cheese.
