"How little it takes to eat healthy and tasty - just steam roast your favorite vegetables and youre done"

Ingredients

  • potatoes - 2 pcs. (medium - sized)
  • carrots - 1 large carrot
  • green beans - about 120 g (fresh)
  • eggplants - 1 pc. (small/medium)
  • garlic - 2 cloves
  • onion - 1/2 onion
  • green peppers - 1 pc. (or 1 red)
  • olive oil - 5 - 6 tbsp.
  • salt - 1 level top tbsp. (or by taste)
  • dried thyme - 1 tbsp.
  • black pepper - 1 tsp. (or by taste)

How to make

Clean, wash and cut all the vegetables into large pieces. In a bowl, mix them with olive oil, the spices and salt.

Transfer them into a glass baking pan with a lid and pour a little water, just a little on the bottom. You don't need to cover them in water.

Put the lid on and put it in a preheated oven at 390°F (200 degrees) for 30-40 minutes, then reduce the temperature to 360°F (180 degrees) and leave them to stew for another hour.

Check the roasted vegetables from time to time to see if they are ready. The time depends a lot on the size of the pieces you have cut and how thick the vegetables are.
