I always cook this dish with olive oil, stewed for a minute with garlic and chili.
Then add the tomatoes, so that they do not to fry, but stew. Add the grated zucchini to the tomatoes (this way the zucchini absorb the aromas better).
You can also skip the zucchini - just add two tomatoes and the shrimp. Stew, so that they are left in fat.
The shrimp can be cooked in their shells, but when cooked at home, they are peeled so that we do not swallow a grain of sand when eating them and it is awful when they are greasy with sauces and stick to your hands and everywhere else.
I recommend these shrimps with zucchini - they are very, very tasty.
