How to make
Clean the cherries from the stems, wash them and then remove their seeds and cut them. We do this because if we cut them first and then rinse them, we will wash away some of the syrup they will release.
Pour water over the fruit, add sugar and boil them over low to medium heat for 50 minutes - 1 hour.
While the mixture is hot, add the geranium leaves and leave them to release their aroma, until the mixture completely cools. Then remove them, squeeze the lemon juice and blend everything. If it is very thick, you can dilute it with a little water.
Strain the cherry syrup through a fine sieve and pour it into bottles, by closing them tightly and store them in the refrigerator.
As the amount is very little, the syrup is for direct consumption. Dilute it with water in the proportions you want and serve it with ice cubes.
In case you prepare more, you should seal the syrup in dark bottles, closed with metal caps and store them in a cool and dark place.
