How to make
Grind the oats in a blender together with the oat bran. Oatmeal flour can also be used, but it is always better to prepare it at home to make sure there are no impurities.
Peel a banana, sprinkle them with the citrus juice and mash them with a fork. Bananas with a darkened peel are most suitable because they are perfectly soft, but you can also use yellow ones to mash. They have the advantage that they contain starch and the pancakes will be thicker and easier to process.
Add the milk and yogurt and a pinch of salt and sugar to the banana puree. Mix until a homogeneous mixture is obtained, add the oatmeal flour and mix again. A mixture thinner than cake batter should be obtained.
Leave it for 5-10 minutes, so that the oats absorb liquid and its particles swell up, which thickens the dough.
If it becomes very thick, dilute it with a little more milk.
The banana pancakes are baked in a pan heated over medium heat, greased with a little oil. In no case should the hob be set on high heat, because they bake quickly and remain soft on the inside and are difficult to turn. Pour the mixture in small portions and spread it out and turn the pancakes with a silicone spatula. It's better to make them smaller in size.
Due to the absence of egg, as well as gluten, there are no soldering ingredients, except to some extent the banana itself, so these pancakes are prepared in a more specific way. They do not look like anything special, but are super tasty, healthy and dietary.
Eat them hot for breakfast with honey, caramel or a chocolate topping and fresh fruit.
