How to make
Take out the meat and leave it at room temperature 30 minutes before you start cooking.
Rub it with black pepper and roll it in flour along with the mushrooms - cleaned, washed and dried.
Heat the butter with olive oil over a high heat and briefly cook the pork fillets on both sides. You do not need to shake the excess flour off of them, as it is also needed and it will help to thicken the sauce.
Add the mushrooms, fry them briefly and pour the wine and lemon juice. Season with salt and more black pepper, if desired and cook for about 15 minutes, by reducing the heat slightly.
Once the sauce is reduced, pour the water and add the garlic cloves in slices. Cook until it is reduced again for about 5 minutes.
After removing the dish from the heat, sprinkle it with parsley and serve it immediately.
