Ingredients

  • filo pastry sheets - 9 oz (250 g)
  • white cheese - 10 oz (280 g) not very salty
  • sour cream - 3.5 oz (100 g)
  • oil - 1 cup + for greasing
  • butter - about 0.9 oz (25 g)
  • eggs - 3 large eggs
  • milk - 2 cups
  • cream - 1 cup (liquid)
  • yellow cheese - for sprinkling
  • sesame seeds - for sprinkling

How to make

Crumble the white cheese in a bowl and mix it with the sour cream and oil. This will be the filling for the village-style borek. If you're using a very salty cheese, reduce the amount.

Spread out the filo pastry sheets on a countertop or put a damp cloth underneath to prevent the latter from drying out. Distribute evenly from the filling and two by two are wrapped and arranged in the form of a spiral in a greased pan or lined with baking paper.

Beat the eggs with a pinch of salt and mix them with the milk and cream. It is best if the milk has a lower percentage of fat, as the other products are quite high in fat.

Pour the mixture over the borek and make holes here and there with a fork or a skewer. The butter is cut into pieces and distributed on top.

Bake it for 15 minutes in a preheated oven at 390°F (200 degrees) and when it is fully baked, take it out, sprinkle it generously with yellow cheese and then sesame seeds. Put it back in the oven for another 15-18 minutes or until it acquires a dark golden color.

Once it is ready, it can be sprinkled once more with yellow cheese, which is then left in the switched off, but still hot oven, in order for it to melt.

This village-style borek turns out incredibly tasty. It has a crispy crust and it is juicy and soft on the inside. It's high in calories, yes, but we can allow ourselves to sin from time to time without feeling bad about it.
