Shrimp Ajillo or Gambas al ajillo is one of the most typical Spanish Tapas and perhaps the simplest and easiest to prepare.
To make it completely authentic, use a clay cookware with low walls, basically a clay pan. If you do not have one, prepare them in a baking pan.
It is good for the shrimp to be fresh, but they can also be frozen and defrosted, as long as they are of good quality.
Heat the olive oil over a low to medium heat and put the dry hot pepper in it - whole.
Cut the garlic into thin slices and fry it briefly, so that it can release its flavor.
Add the shrimp, a little salt and stir. Cook them for about 2-3 minutes, depending on their size.
Sprinkle them with parsley and serve them immediately.
