The Shopska salad comes from the distant year of 1956, when it was created by professional chefs from the Bulgarian state association Balkantourist, who then worked in the restaurant Chernomorets, Druzhba resort (known as St. Constantine and Elena). It was changed up until 1970, with variations of products with raw pepper, roasted pepper, hot pepper, with white cheese, no white cheese. The idea was to recreate the national tricolor flag and to become a popular starter.
The brined cheese is a must for the Shopska salad, and the original recipe also includes tomatoes, cucumbers, roasted peppers, onions, parsley, olives, oil, vinegar and salt.
The tomatoes are cut into cubes. Peel a cucumber and cut it into circles or crescents. The pepper is cut into strips. Chop the onion and parsley.
Transfer everything into a bowl and season with salt and as much vinegar and oil as you like. Stir and distribute the salad into a plates, forming a pile.
Sprinkle it generously with grated white cheese on top.
Garnish it with olives, green peppers and sprigs of parsley.
