How to make
For the dressing
Whisk 3 yolks in a bowl, add the mustard and start pouring the oil very slowly. Keep whisking until the mayonnaise thickens.
Season with salt, pepper, the juice of half a lemon, and the sour cream.
To complete the dressing add a few drops of worchestershire sauce and Tabasco, as well as, the anchovies and vine leaves finely chopped. Last but not least, grade the parmesan cheese and mix all the ingredients.
For the croutons
Dice two slices of bread and toast them in a pan with some butter.
Cut the iceberg in a bowl, add the dressing and mix well.
Garnish with the croutons
