If you love Italian ice cream, be sure to try the recipe for summer semifreddo.
Pour hot water over the almonds. After 5 minutes, peel them, by squeezing them between your fingers. Roast them lightly and grind them.
The egg and yolks are mixed with honey and placed in a water bath. Beat until a white and slightly thick mixture forms. Leave it to cool.
Whip the cream until it thickens.
It is added to the egg-honey mixture. Add the grinded almonds. Stir until you have a smooth mixture.
A rectangular cake tin with a capacity of 5 cups (1 liter) is covered with cling film. The homemade semifreddo mixture is poured into the mold and is smoothed.
The semifreddo is placed in the freezer to freeze.
It is then turned over onto a tray. Remove the cling film and decorate the ice cream dessert with blackcurrants or fruit of your choice.
