How to make
Cook the bulgur in lightly salted water, combining 2 parts of water and 1 part of bulgur. If the bulgur is medium sized, it can be soaked in boiling water, until it absorbs it, without cooking. Only the uncracked bulgur wheat must be cooked, the rest can be soaked.
Add the finely chopped mint, parsley and sping onions (save a few mint leaves for decoration)
Season with olive oil, lemon juice, salt and black pepper, and mix well. Save a little lemon juice and olive oil for the cucumbers.
Create long, thin cucumber stripes using a peeler. Set aside the middle part of the cucumbers, it is too soft. You can use it for another salad, a vinegraitte or a Gaspacho Andaluz.
Place a cucumber stripe on a serving plater or individual plates, add a tsp of the bulgur filling and roll it into a tube. Place it verticaly and add more bulgur to fill it in. Repeat with the remaining products.
Drizzle with olive oil and lemon juice. Decorate with mint leaves.
