Heat the oil and fry the flour in it, stirring vigorously for 2-3 minutes. Pour in the hot water in a thin stream while stirring continuously. The goal is not to make pellets but a smooth sauce.
Season it with a pinch of salt and let it bubble, stirring for a few minutes. Add the crumbled feta cheese to the mixture and after 20-30 seconds, remove it from the heat.
Fry the butter with the paprika. Serve the feta cheese porridge on a plate, covered with 1-2 tablespoons of the roux.
