Ingredients

  • filo pastry sheets - 1 package
  • pumpkin - 2.2 lb (1 kg)
  • walnuts - 7 oz (200 g)
  • oil - 1 cup
  • sugar - 8.8 oz (250 g)
  • cinnamon powder - 1 tsp.
  • vanilla - 2 sachets
  • powdered sugar - for sprinkling (optional)

How to make

The pumpkin is cut, cleaned from its seeds with the help of a spoon, peeled and cut into pieces. Grate the pumpkin pieces on a coarse grater.

In a deep and wide pan, in half of the oil, stew the pumpkin, while stirring it occasionally until it softens. Remove it from the heat and add the sugar, cinnamon, vanilla and coarsely crushed walnuts.

Take two filo pastry sheets and spread them with oil. Put the stuffing on the sheets and roll them up. Transfer them into a greased baking pan.

Bake the pumpkin in a preheated oven at 360°F (180 degrees) for 40-45 minutes until it aquires a golden brown color.

Once you remove it from the oven, spray it with a little cold water and wrap it with a towel.

When serving, the pumpkin filo pastry, it can be sprinkled with powdered sugar if desired.
