Wash and cut the zucchini into fine slices. Sprinkle them with salt and leave them aside for their juice to drain and so that they can soften.
In a bowl, beat the eggs for the breading. Make the filling by crumbling the white cheese and mixing it with the egg.
Put stuffing on a zucchini slice and place another slice on top.
Dip them in flour, then in the beaten eggs and fry them until they aquire a golden color on both sides.
