"Magic in cuisine is when you mix together plain ingredients but end up with an aromatically delicious dish."

Ingredients

  • potatoes - 2 lb (1 kg), fresh
  • olive oil - 3 1/3 tbsp (50 ml)
  • milk - 4/5 cup (200 ml)
  • eggs - 4, large
  • feta cheese - 7 oz (200 g)
  • cheese - 4.5 oz (120 g) + more for the top
  • onions - 4 sprigs fresh
  • garlic - 4 sprigs fresh
  • dill - 1/4 bunch
  • black pepper - to taste
  • salt - to taste

How to make

Wash and clean the fresh potatoes well, you can cut the larger ones. Distribute them in greased clay pots, top them with olive oil and put them to bake in a preheated oven at 390°F (200 °C) for about 30 minutes. Stir the eggs with the milk, well-crumbled feta cheese and coarsely grated cheese, finely chopped green onions and garlic.

Top the baked potatoes with the milky mixture and put it to bake again until it hardens. Then sprinkle it with grated cheese and bake it for a few minutes.

Serve the potatoes and eggs in clay pots with a little dill or parsley.
