How to make
We use only the white part of the leeks (you can replace it with green onion). Cut it in small pieces and then fry in 1 tbsp oil and 1-2 pinches of salt. When the leeks soften, add the cream and boil.
Boil over medium heat for 7-8 minutes. Season the with nutmeg and black pepper. Arrange the clay pots in a baking dish with water. Coat them with the remaining oil.
Spread the mixture in them and in each put cheese and 1 egg. Bake them for about 15 minutes in a preheated 370°F (190 °C) oven in a water bath.
Take 1-2 tablespoons of the heated the oil and fry the sage leaves until crispy and top them with hot food.
