How to make
If your snails are not clean, wash them and put them to boil for half an hour. Remove the meat from the shells and save the broth.
Heat the oil and place the onions to stew first, then the chopped carrots and finely chopped pepper. Soak the pre-washed rice in water for 20 minutes. Add snails to the vegetables and top up with 1/2 cup of the broth. Stir for 2 minutes and add the drained rice.
Stir briefly and add salt, black pepper and white pepper to taste. Transfer everything into a greased pan, top it up with 3 and 1/2 cups of the broth and put it to bake in a moderate oven for the liquid to evaporate.
