How to make
Clean and grate the beetroots. Season to taste with a mixture of lemon juice, vinegar, olive oil and the spices and let it cool for 15 minutes.
Drain the beets and save their juice. Arrange 2-3 lettuce leaves in a salad bowl, top it with the drained beets. Throw in a few cherry tomatoes and add the croutons along with the mozzarella, that you've cut into cubes.
Pour in the beet juice on top and serve.
