Ingredients

  • beetroots - 10.5 oz (300 g)
  • lettuce - 2 - 3 leaves
  • cherry tomatoes - a few, small
  • croutons - 1 1/3 tbsp (20 g)
  • mozzarella - 2 oz (50 g)
  • vinegar - 1 tablespoon
  • olive oil - 2 tablespoons
  • lemon juice - 1 tablespoon
  • basil - 1 - 2 pinches of dried, or use fresh

How to make

Clean and grate the beetroots. Season to taste with a mixture of lemon juice, vinegar, olive oil and the spices and let it cool for 15 minutes.

Drain the beets and save their juice. Arrange 2-3 lettuce leaves in a salad bowl, top it with the drained beets. Throw in a few cherry tomatoes and add the croutons along with the mozzarella, that you've cut into cubes.

Pour in the beet juice on top and serve.
