How to make
Leave the beef steaks at room temperature for at least 2-3 hours, before cooking. They should be sealed, so their surface doesn't turn brown.
Heat a nonstick cast iron pan on high heat. Grease the pan with a drizzle of olive oil and sear the steaks for 2 minutes on each side. Set aside and allow them to rest for a minute. In the meantime melt the butter at low to moderate heat.
Drizzle with half of the melted butter and return the steaks into the pan. To avoid burning you can add a little olive oil to the butter.
Cook the steaks for 2 minutes on each side, or to taste. When you turn each steak add the remaining butter and coarse salt.
Once ready, set the steaks aside and season the unsalted side with salt. Pour some of the pan juices on top of them.
Allow the steaks to rest for 2-3 minutes covered with tin foil, that has one or two holes on top, so the steaks can breathe.
Consume warm with a glass of wine.
