Ingredients

  • mushrooms - 8 oz (220 g) mix (button mushrooms, porchini, shiitake)
  • potatoes - 1 pc.
  • milk - 3 cups
  • onions - 1 pc, medium sized
  • garlic - 4 cloves
  • butter - 0.5 oz (15 g)
  • parmesan cheese - finely grated
  • oregano - 1 tbsp
  • stock - 1 liter chicken or vegetable
  • bay leaves - 1 pc
  • olive oil - 6 tbsp
  • salt - to taste
  • toasted bread - 8 slices

How to make

Start preparing this tasty soup by chopping the onion and garlic finely.

You can add a small carrot, if you wish. Saute the vegetables, until they soften.

Add the mushrooms and potato chopped into cubes. Keep cooking for 1-2 minutes.

Season with the bay leaf, salt and oregano, and pour in the milk. Stir and cook for a couple of minutes.

Pour in stock the of your preference. If the soup is too thick, you can add a little water or milk. Cook for 20 minutes at moderate heat. Once ready, add the Parmesan cheese and butter.

Serve this Traditional Italian Soup with toasted bread. You can also garnish with some more oregano and Parmesan cheese.
