Ingredients

  • chicken breasts - 17.5 oz (500 g)
  • sausages - 9 oz (250 g) chorizo or bacon
  • peppers - 1
  • tomatoes - 2, medium
  • red beans - 2 tablespoons canned, coarse
  • peas - 1 cup
  • onions - 1 medium head
  • carrots - 1
  • garlic - 3 cloves
  • saffron - 1 small packet
  • chicken broth - 1 1/2 cups
  • red wine - 1/4 cup
  • chili sauce - 1/2 tsp
  • rice - 2/3 cup, pearl
  • parsley - 1/2 bunch
  • salt
  • black pepper
  • white pepper
  • paprika - 1 tsp
  • lemons - 1

How to make

Cut the chicken breasts into equal sized small bites and fry them in heated oil until browned. Add the sliced chorizo or bacon and stir until it is fried.

Then add the chopped onions, peppers and tomatoes and fry for 2-3 minutes, add the saffron as well. Next, add the drained beans, peas, finely chopped garlic, finely chopped carrot, paprika and chili sauce.

After a little while, pour in the wine, and after a minute - the broth. Allow the liquid to reduce by half and add clean and washed rice. Stir for 2-3 minutes, put a lid on and allow the rice to boil. If you need more liquid, top up with a little warm water.

Season with salt, white and black pepper. When the rice absorbs all the water, the paella with chicken is ready. Serve with chopped parsley and lemon slices.
