How to make
If you do not have roasted peppers, roast fresh peppers in advance. In a baking dish, place the cut into crescents onion, the finely cut peppers, mushrooms, olives and corn. Add the tomato sauce and stir the mixture well. Add spices to taste.
Wind the thin sausages into four snail shells, place them atop the mixture in the dish and put it on high heat until the sausages cook.
Once they acquire a golden color, break an egg on each and put the dish back in the oven for 10 minutes to bake the eggs.
You can garnish them with chutney or steamed potatoes.
