In a deep bowl, beat the lard/ soft butter with sugar continuously with a wooden spoon for about 10 minutes. Slowly add the eggs 1 by 1, the flour spoon by spoon, grated lemon zest and baking powder.
Pour this mixture into a buttered and sprinkled with breadcrumbs tray and bake in a moderate oven for about 45 minutes. Once cool, cut the cake carefully into 2 and stick it back with a marmalade of your choice.
A very tasty option is using rosehip marmalade. Instead of marmalade, you can use a jam or cream of your choice.
