Squeeze the juice from the oranges well. Mix it with the sugar and add the grated peel of 3 oranges and 3 tablespoons of water. Beat the egg yolks and add them to the orange mixture.
Put these to boil in a water bath to thicken by stirring. Separately, beat the egg whites to thick snow with a little salt. Once the orange cream cools, add them carefully to it and stir well. Whip the cream with the powdered sugar.
In dessert bowls, pour some of the orange cream, confectionery cream, orange cream again, and confectionery cream once again. The cream is served chilled with sliced bananas.
