How to make
Cut the baguette into oval slices approximately 0.4″ (1 cm) thick.
Bake the slices in a preheated 360°F (180-degree) oven for 5 minutes. Put the red pepper in the pan, and leave it to bake lightly for another 5 minutes. Cut it into strips and cover them with olive oil.
Cut the roasted peppers into small pieces. Mash the avocado together with the garlic clove.
In a suitable bowl, mix the cottage cheese, olive oil, avocado puree, pepper and parsley. Season with salt.
Spread the mixture evenly on the crostini and decorate with slices of lightly roasted red pepper, corn and parsley leaves.
