Ingredients

  • potatoes - about 2 lb (1 kg) large
  • oil - 1 cup
  • butter - 1 tablespoon
  • onions - 2 heads
  • mince - 9 oz (250 g) of beef or lamb
  • tomato paste - 1 tsp
  • black pepper
  • paprika
  • salt
  • eggs - 1
  • parsley - 1 bunch
  • broth - 1 1/2 cups, or use water
  • tomatoes - 2 - 3

How to make

Peel the potatoes, wash and halve them. Cut off the rounded part on the bottom to let them sit upright. Using a spoon, carve out the potatoes. Heat a little oil and fry the potatoes on both sides for about 2 minutes. This hardens them and they will not fall apart during baking.

Arrange the potatoes in a greased tray. With a spoonful of butter, fry the chopped onions and add the minced meat. Stir and fry for about 4 minutes. Add the tomato paste, stir well and remove it from the heat. Season with salt, black pepper and paprika, egg and finely chopped tomatoes.

Mix once again and fill the potatoes. Put a slice of tomato on each potato. Fill up the tray with the warm broth or water. Add tomato slices.

Put the Turkish stuffed potatoes in to bake for about 30 minutes in a moderately heated oven. This is a traditional Turkish recipe for stuffed potatoes, named Oturtma (sitting potatoes).
