How to make
Wash the potatoes and dry them. Wrap each one in aluminum foil that you've well oiled on the inside. Put the potatoes to bake in a preheated 390°F (200 °C) oven. Meanwhile, sauté the chopped spinach in a little olive oil until completely shrunk.
Separately, sauté until the mushrooms are ready and season them with spices to taste. Once the potatoes are ready, allow them to cool slightly. Cut them lengthwise and gently open them up.
Add salt, sprinkle each with black pepper, spinach and mushrooms on top. Optionally, you can add a piece of pan- fried tofu.
