How to make
Cut the baguette into slices. Arrange in a pan and pour olive oil over them. Add salt and bake the slices at 390°F (200 C) for 10 minutes.
Finely chop the red onion and garlic cloves. Stew in a lump of butter. Season with salt and pepper.
Peel and cut the mushrooms into thin slices. Increase the heat and add the mushrooms to the pan with the onion and garlic. Season the mixture with more black pepper. Finely chop the whole parsley sprigs and add them. Add the thyme leaves and soy sauce. Add salt to the mixture just before removing from the heat.
Grate the parmesan. Remove the slices from the oven. Sprinkle with cheese, place the warm mushroom mixture and finish again with parmesan.
Serve the bruschettas warm.
