How to make
Wash the chicken wings and dry them. If they are whole, cut them into three pieces.
Make a small cut at the skin of each piece, so the marinate can reach the meat as well.
Place the wings in a bowl and add the soy sauce, shreded ginger, crushed garlic, sugar and spices.
We did not add salt, since the soy sauce is quite salty, but if you wish you can add some.
Mix all the ingredients together with you hands, cover with cling film and let the wings marinate in the fridge for as long as you can.
Basically 24 hour is ideal, but if you dont have so much time, marinate them for at least 1 hour. We left them for six hours.
Separate the eggwhites, whisk them and add them to the bowl along with the corn starch. Once you mix all the ingredients nicely, the wings are ready to be deep fried.
Heat the oil and dip the wings carefuly. Flip them over a couple of times, until they turn golden brown from all sides.
This batter keeps the oil clean, so you can use it to fry some french fries to go with the wings.
