Ingredients

  • beef - 1.1 lb (500 g)
  • onion - 2 pcs. (shallots)
  • flour - 2 tbsp.
  • carrots - 1 pc.
  • celery - 1 stalk
  • onion - 1 onion
  • butter - 1 lump
  • olive oil - 1 cup.
  • black pepper - pinch
  • salt
  • parsley - pinch
  • lemon juice - 3 - 4 drops

How to make

Cut the meat into chunks. Put it in a pot along with a carrot, the celery stalk and a whole onion.

Add an level top tablespoon of salt and about a liter and a half of water. Boil the meat until it's cooked.

Remove the bites and strain the broth.

Finely chop the two small shallots.

In a saucepan, melt a small lump of butter and add a cup of olive oil. Heat and add the chopped onion. Fry for a short while. Add the beef bites, add a ladle of the broth and cover with a lid. Stew for about 20 minutes.

Make sure the onion has softened well enough before continuing with the cooking.

Add two tablespoons of flour and stir. Add the broth, cover the pan and cook for another 20 minutes.

If the sauce thickens a lot, add some of the broth. Remove the cooked stew and season with a pinch of black pepper and a few drops of lemon juice.

Distribute the stewed beef into plates and sprinkle with chopped parsley and serve.
