Ingredients

  • chicken breast - 1.1 lb (500 g)
  • onion - 1 medium sized
  • peppers - 3. (green, orange and red)
  • corn - 4 tbsp sweet, canned
  • carrots - 2 finely shredded
  • celery powder - 1 tbsp.
  • garlic powder - 2 - 3 pinches
  • ginger powder - 2 pinches
  • cayenne peppper powder - 1/3 tsp.`
  • salt - to taste
  • yellow cheese - to sprinkle on top
  • olive oil - 4 tbsp.

How to make

Chop the onion and peppers and saute them in hot oil until they soften and turn slightly brown. Add the finely shredded carrots.

Dice or slice the chicken breast depending on your preference. Add it to the vegetables and saute it for 2-3 minutes, stirring occationaly, until the meat turns white.

Pour 1/2 cup of water, season with the ginger, cayenne pepper, black pepper, garlic, salt to taste and celery. Cook for five minutes stirring from time to time. By that time the chicken should be cooked. If you have cut it into bigger pieces, cook it a little more, but be careful not to dry it out.

Add the corn, mix well and serve the chicken with grated yellow cheese.
